We've just changed our 3-course fixed price French Menu at Sly's, and we think everyone will find something that they like on it.
Typically, this menu from the Southwest of France is one of our customers' favorites when it rolls around. From the Roasted Beet & Watercress salad to the "Bras de Gitane" Rum Cake with Oranges with its strong Catalane influence (As does the extraordinary Creme Caramel), the cuisine of Languedoc Roussillon is a popular menu at Sly's.
Bounded by Spain and Catalonia to the south, the Basque Country on the west, the pleasures of Provence on the east, and Bordeaux to the north, it should come as no surprise that the Languedoc is an area with a rich culinary heritage. Personally, I think of D'Artagnan and the Three Musqueteers, and their adventures, both culinary and otherwise, when I think of the Languedoc. Sly’s has tried to come up with some selections that bring some of the wonderful cuisine of this area of France to life.
This regions menu has always been a popular one, so much so that it would be difficult to say which of the main courses on the menu people enjoyed most. A number of customers have returned to try each item on the menu - quite flattering, I assure you.
One standout has the been "our little Cassoulet" - our delicious and filling version of the uber-traditional bean stew of the Languedoc. We had a local farmer grow some special beans for us - makes a big difference, "fresh" dried beans - and then we make in house our duck confit, traditional saucisson à l'ail garlic sausage, & saucisse de Toulouse and simmer all of it together for a great dinner. And, of course, where else are you going to get cassoulet?
Also popular are the "Drunken Lamb" a traditional dish from Gascony. Leg of Lamb, roasted medium rare, and simmered with red wine, many, many whole cloves of garlic, green olives, carrots and onions. Grilled fillet of trout with toasted almonds, and pan-braised chicken breast with dried figs and sweet Banyuls wine fill out the choices for the main courses.
We suggest let our skilled bar staff start you with l'Apero Gascon, which is made with sparkling wine, and our homemade prune and Armagnac syrup - aromatic, flavorful, and not too sweet. A great cocktail to start.
There are several wines to choose from, and you can bet that we’ve chosen some good ones to accompany your meal.
As always, the French fixed price menu at Sly's is still just $35. per person, plus tip and tax, or just $55. per person with two glasses of wine.

Continuing with the Sly’s tradition of the $35. fixed price menu featuring French cuisine, our next menu offering at will feature the a cuisine closer to home, but further away in time: The French Menu in America. The choices on this “time traveling” menu will feature the dishes made famous when French cuisine in America was in it's heyday, the 1960s and 1970s - and not coincidentally, when Chef James and some his chef friends were "coming up" and learning at those French restaurants in America. Specifically, we'll be featuring recipes from Chez Cary in Orange County (now just a memory) where my friend Chef Michael Hutchings and I did our apprenticeship long, long ago.
